Neat wiki!
One of the problems I am finding in our school district is finding both a wiki site that can be kept private and does not require a student email account to sign-up. Well, I have come across a rather simple one, called Jottit.
It is very simple to use, although it is a tad unconventional to create the classroom wiki. First you type in some sample text to create the site, next you choose settings to create your unique URL, and then you simply put in a password to claim your site. It is at this point that you are able to choose the option to require the password to both edit and view the site. This allows teachers to have a classroom wiki that is only accessible to students who have the password and students do not need an email address to sign-up.

Thanks, Kathy -- that is very cool. I've just created a quick wiki on jottit! Now to let the history teacher know. That was very easy. Time for another cup of coffee.
I've had the same problem but went a different direction. I created email accounts through gaggle.net for each student in my class (http://www.gaggle.net). It's an email web-based system created for schools - has a lot of features and is controlled by the teacher. Inappropriate content is blocked and forwarded to the teacher. I signed my students up so they could use wikis, but discovered gaggle has blogs, discussion boards, and chat rooms.

Thanks so much! As soon as I read your post I created a wiki for my 8th graders. We are doing a research project and I wanted a place for students to collaborate!!

We have had this exact same problem trying to get our second graders and their collaborating partners in Thailand onto the same wiki or ning. I wish I had heard about this sooner! Thanks!
